Winemaking
This wine is the result of a rigorous selection of Vinhão variety. That is the premium grape variety in Vinho Verde region. These grapes come from our best associates, mostly vinified in simple cord with an average of 15 years old. The grapes are carefully vinified to remove all qualitative potential: cold maceration, approximately for two days, to promote the color extraction; followed the separation of the liquid that will ferment (at 17ºC) in contact with wood, helped by selected yeasts and co-inoculation of lactic bacteria’s that will rush the malolactic fermentation. Finally, the wine is kept in bâtonnage before be stabilized and bottled.
